Remembering to bring the recipe

just putting up a recipe I promised Nicci I'd be making when I come over (Yes, it's past 1AM, yes, my train leaves at 3.40AM, NO, I've no intention of sleeping)
Chicken with coconut (kuku paka)
For marinating the chicken
1.45-1.5 kg/3 1/4 - 3 ½ lb chicken, skinned and cut into serving pieces.
1 tablespoon peeled and finely grated fresh ginger
4 cloves garlic, peeled and crushed to a pulp
1 teaspoon salt
1 teaspoon cayenne pepper
1 tablespoon lemon juice
For the sauce
180 g/6 oz tomatoes, chopped
140 g/5 oz onions, peeled and chopped
2 bird's eye chilies, chopped (piri piri)
2 tablespoons freshly grated coconut or grated frozen or desiccated
3/4 teaspoon salt
1 tablespoon ground cumin
3 tablespoons corn or peanut oil (I occasionally use whatever I have - like sunflower seed oil)
400ml/14 fl oz can of coconut milk, well shaken
1 tablespoon lemon juice
